KOVAL Distillery was founded in 2008 and is the first distillery in Chicago for more than 100 years. The company’s founders Robert and Sonat Birnecker gave up their academic careers, to bring the distillation tradition and the techniques of Roberts Austrian grandfather to America. Both biologically and certified kosher to KOVAL keeps to the highest standards of purity and craftsmanship. It is distilled in small batches from 100% organic grain, which grows in the Midwest. Koval thus avoids the common practice prefabricated zuzukaufen neutral grain spirits or whiskey. Each step of the distillation process of the mash to bottling is carefully monitored to ensure that only the best spirits are produced. The name Koval is Yiddish for “blacksmith”, but it can also “black sheep” or someone who is driving something or extraordinary does mean. Sonats grandfather was nicknamed Koval, when he surprised his family at the age of 17 years and emigrated in the early 1900s from Vienna to Chicago. Coincidentally, the name of Roberts grandfather (on its side Robert the art of distillation learned) Schmid. Sonat and Robert chose the name Koval to honor both men. It is also intended as a reflection of their own, exceptional decision secured jobs in DC abandon to move to Chicago and there build a family from scratch.
Brilliant pale gold in colour. Excellent aromatic lift with pine sap and rooty / white pepper notes combined with peppermint chocolate and muted cough lozenge sweetness. Middle-weighted with a silky, woody-juniper entry followed by butter menthol lozenge and hints of vanilla on the finish. Beautifully composed, a very elegant barrel aged gin.
